Bread made of “dark matter”.
I am sure a few people are still waiting for the Guinness Bread recipe. I am also sure that some of you are hissing through their teeth, because you had to wait so long. Would not be surprised if you drank the can of Guinness Draught by know. That is the one you will need to make this bread. Again I will like to warn you that I had to do my best to formulate a recipe of some sort. Again it will be trial and error. Do not give up. I am not sure if this will work in the “lazy house wife’s” bread machine. Luckily there are no kneading involved mix the dry with the wet ingredients and “voila”. So here we go.
Ingredients:

| 500g | Wholemeal Flour (brown bread flour) |
| 125g | Plain Flour (cake flour) |
| 125g | Sultanas |
| 1/2 can | Trickle (molasses from Illovo 454g) |
| Same amount | Warm Water |
| 1/2 can | Guinness (500 ml) |
| 1 tbsp | Bread Soda (bicarbonate of soda) |
| 1 tsp | Salt |
| 1 tsp | Mixed Spice |
| 2 | eggs |
Method:
Mix all the dry ingredients together in mixing bowl. (flours, sultanas, bicarb, salt, spice) You can do this mixture machine as long as you use the dough hook and not the whisk attachment. Heat up the trickle, it will be easier to work with and help with the mixing. Add all the wet ingredients together. (Eggs, water, trickle, Guinness) Put dough in well oiled bread tin. Sprinkle some dry oats on top. Bake at approximately 180 C for about 55 minutes or until cooked. Bread has a hollow sound when you tap it.
Trickle is molasses and if I remember correctly you can buy this in the same tins as Illovo Golden Syrup. Please shout if you have any questions. I baked every day about 25 of these so it is difficult to reduce the recipe to one loaf. It is a fairly moist mixture so do not panic when things look bit runny.
You can have this bread with smoked salmon, mackerel pate or smoked snoek pate. Please do not forget the “vino”.

Ai, die naweek moet nou kom dat ek die broodjie kan bak.
Ek wonder nou of ‘n mens dit sommer in ‘n broodmasjien ook kan bak. Jy weet, ek het baie wit olifante wat in my kombuis staan en die broodmasjien is een van hulle. As ek dit nou kan gebruik sal manlief dalk weer vir my ‘n gadget gaan koop.

Zee: Vir een oomblik het ek gedink jy praat van manlief toe jy wit olifant noem. Ek wou hom waarsku dat hy dalk by die volgende basaar op die tombola tafel beland.
Dalk moet jy die broodmasjien probeer en vir ons kom terug voering gee.

Broodjie het baie lekker uitgekom in die broodmasjien. Moet se, ek is nou regtig nie een wat bier drink nie, nog minder daardie slegte swart goeters maar dit was regtig lekker in die brood!
Gaan hom nou probeer soos jy se in die oond en sien watter ene die lekkerste is!!

Zee: Ek is bly dit het gewerk. Ek is eerlik om te sê dat ek nie sommer resepte gee nie, juis omdat almal terug kom en sê dit was verkeerd of so. Ek dink jy moet sommer die brrodtjie bak vir die volgende basaar. Jy sê net daar is bier in dan koop hulle.
Roer: Ek het ook niks van brood bak gehou nie. Deesdae as ek die geleentheid kry vind ek dit is tog heerlik. Al kom hy nie reg uit nie, probeer net weer. Is lekker om iets te sien wat jy gemaak het met jou eie hande.
